Sometimes you need a quick — and reasonably good-for-you — snack, or want something that doesn’t lend itself to making a big batch ahead of time and parceling out into servings, but it can be tough to cook for one.

Greatist has published this nice list of suggestions (and recipes) for easy, small meals with good, nourishing ingredients, including some wonderfully easy desserts — all in single-serving size, which can be a huge plus if you’re the kind of person who will happily eat ALL of the mac & cheese or cake you just made (raises hand).
