Only a tiny minority of people are actually harmed by eating gluten, but many people find that if they eat less gluten-containing foods they feel better. That could be for many reasons, including undiscovered sensitivity traits, something about gluten processing that we don’t understand yet, other food components that tend to travel along with gluten, another ingredient that is commonly combined with gluten-containing foods, or in some cases even just having trouble with portion control (“the dose makes the poison”) — lots of possibilities. Nevertheless, an industry has popped up, demonizing wheat only slightly less than sugar itself.
If you discover you feel better when you eat less wheat products, by all means, eat less wheat products, but keep your eyes open for other possible explanations, too — you may be able to come up with an even better solution.
